It sounds like you are referring to the 1790-1840 complete count household-level data available via IPUMS USA. Please correct me if I am wrong.
There is very limited documentation on the 1840 census. According to the US Census Bureau archives, each family was asked about the number of universities, primary schools, and grammar schools. Following these questions, each family was also asked the number of students or scholars associated with each institution. The NACADSTU variable seems to identify the number of students associated with an academy or grammar school and the NPRIMSTU variable seems to identify the number of students associated with a primary school. I wish I could provide more detailed information than this, but this is all I can find on these variables.
